Subject: [PATCH] Update polling defaults: 5s interval, 20min max wait time

Changed defaults to user's preferences:
- poll_interval: 10s → 5s (faster checking)
- max_wait_time: 600s (10min) → 1200s (20min)
- max_wait_time limit: 3600s → 7200s (allow up to 2 hours if needed)
- poll_interval can now be set as low as 1s

Updated QUICKSTART documentation to reflect new defaults.
